Homemade Gulab Jamun

ByCulinary TeamLast updated

Soft, melt-in-your-mouth milk dumplings soaked in rose-scented sugar syrup - India's most beloved dessert.

Medium
Prep: 20 minsCook: 25 minsServes: 15 pieces

Ingredients

  • 1 cup milk powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking soda
  • 2 tbsp ghee
  • 3-4 tbsp warm milk
  • 2 cups sugar
  • 2 cups water
  • 4 cardamom pods, crushed
  • 1 tbsp rose water
  • oil for deep frying

Instructions

  1. 1

Make syrup: Boil sugar and water until slightly sticky. Add cardamom and rose water. Keep warm.

  2. 2

Mix milk powder, flour, and baking soda. Add ghee and rub in.

  3. 3

Add warm milk gradually to form soft, crack-free dough. Rest 10 minutes.

  4. 4

Divide into 15 portions. Roll into smooth balls without cracks.

  5. 5

Heat oil to 275°F (low-medium heat). Fry balls slowly, stirring gently, until deep brown.

  6. 6

Drain and immediately add to warm syrup.

  7. 7

Soak for at least 2 hours before serving.

Chef's Notes

Gulab Jamun literally means ‘rose water berry’ and these little treats are pure indulgence. The key is getting the dough consistency right and frying at the perfect temperature for that golden exterior and soft, moist interior.
