At SPICE ROOM, our Rogan Josh follows the authentic Kashmiri method. We start by blooming whole spices – fennel seeds, dry ginger, cinnamon, cloves, and cardamom – in mustard oil until the kitchen fills with their intoxicating fragrance. Tender lamb shoulder is then seared and slow-braised with yogurt, Kashmiri red chili (for that signature deep crimson color without overwhelming heat), and a pinch of asafoetida that gives Kashmiri cooking its distinctive savory depth.
