About This Dish
Our Chicken Biryani is made tawa-style — finished on a blazing-hot flat iron griddle rather than the more common Hyderabadi sealed-pot dum method. Saffron basmati rice and yogurt-marinated chicken are tossed together over high heat so the spices bloom, the rice picks up a faintly smoky edge, and every grain takes on the chicken's flavor. Served with golden fried onions, fresh mint, and cooling raita.
The chicken is marinated in yogurt, ginger, garlic, and house-ground whole spices before hitting the tawa with partially cooked basmati, saffron milk, and ghee. High-heat griddle cooking is what gives our chicken biryani its distinctive aroma and slight char.
